OZARK HOT SAUCE RECIPE (Pepper Relish)

From our 82 year old friend:

INGREDIENTS:
2-1/2 Pounds Hot Jalapeno Peppers.
2 pounds Hot or 3 pounds Mild of onions
1 Sweet Bell Pepper
1 Tablespoon salt

 USE A LARGE BOWL:

Chop all vegetables, add salt.
Let stand 45 minutes.

 DRAIN ALL JUICE OFF:

Mix 5-1/2 cups vinegar, and 5-1/2 cups sugar
and vegetables.

COOKING:
 Bring mix to a boil then turn down heat to simmer for 40-45 minutes or until onions are tender.
THEN CAN: 
 Makes about 7-8 pints.
