Momma Molly’s delicious Sugar-Free Banana Bread or Muffins (mirror)

Sugar-free Banana Bread (or muffins!)

4 medium over ripe bananas – mashed
2 eggs
1/3 cup vegetable oil
1/3 cup honey
1/2 cup milk
1 1/2 cups whole wheat flour
1 cup all purpose flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon

Mix eggs, oil, honey, milk and bananas in a large bowl. Add the rest of the ingredients and blend. Butter two loaf pans and bake at 350 for 35-40 minutes. Muffins only need about 15 minutes. Slather with butter and enjoy!

My wife bakes banana-bread using this recipe all the time and it is truly delicious! We were really sad when the momma-molly.com site was down and we’d never saved/printed the recipe. Finally I was able to find a cached version via the WayBackMachine.
